Ozone can be used as an antimicrobial aqueous solution from the cheese making process (brine disinfection and surface sanitation), through antimicrobial direct contact on most types of cheese varieties as well as disinfection of cutters, slicers, shredders and packaging equipment. Ozone can also be used throughout the plant to supplement traditional disinfectants and thermal sanitation as an additional HACCP step. It can be used on food contact surfaces as well as non-food contact surfaces.

Some plants have utilized aqueous ozone as a disinfectant for recovered cheese fines, rendering them reusable. Other plants have utilized ozone as a disinfectant for recycling water during the process. Ozone has proven highly successful at keeping brine disinfected with no flavor issues associated with traditional chemical sanitizers.
Ozone kills all known food and human pathogens including E. coli, Listeria, Salmonella, Staphylococcus, Campylobacter, Pseudomonas, Aspergillus, Brettanomyces, Trichophyton, Bacillus, Adenovirus, and Norovirus.
Ozone is an approved food additive, so it can be applied at any time during processing on the product and equipment simultaneously. When sprayed on conveyors and automated cutting equipment during processing, ozone can eliminate biofilm and significantly reduce fat, oil and grease buildup on all surfaces.
Ozone compares favorably to traditional disinfectants used in cheese processing. It has a broader spectrum of efficacy than chlorine, peroxyacetic acid, acidified sodium chlorite, hydrogen peroxide and quaternary ammonia.
Unlike other disinfectants, ozone will penetrate and destroy biofilm. Biofilm is endemic to cutting surfaces and processing room surfaces, and must be eliminated for reliable product safety. Ozone leaves no harmful byproducts and requires no rinsing.
